275 - Carciofi allo yogurt alla cretese

Lo yogurt è un ingrediente molto versatile, magari lo sappiamo già, e nei paesi dove si consuma in grande quantità, come Grecia, Turchia o Balcani, si usa spesso nei piatti salati.
Questa ricettina è sempliciccima ma il sapore è sorprendente e molto piacevole.
Si tratta di fare soffrigere della cipolla a fettine in un tegame in olio d'oliva (preferibilmente saporito tipo pugliese...), di aggiungerci i carciofi a spicchi (se sono carciofi piccoli e teneri) oppure i fondi soli, sale e pepe e acqua q.b. e di lasciare cuocere a fuoco basso e coperto fino a quando i carciofi non sono ben cotti.
Giusto prima di servire si aggiunge dello yogurt (preferibilmente yogurt greco denso, di mucca o meglio di pecora), si gira bene il tutto e si mangia, come contorno o come piatto principale con riso pilaf.
La quantità di yogurt deve essere sufficiente per ottenere una bella salsa cremosa.

I don't know how you feel about this yogurt, but I have it two, three times a week and love it!!

Well, Kim, Fage yogurt is the only one we can get in Italian supermarkets and groceries (but it's also the leader-brand in Greece among industrial ones...), and honestly, it deserves praises. It is good. Of course I preffer the local sheep's milk yogurt I find in Crete, but even there you can't find it easily. The other Fage products (rice-pudding, tzaziki...) are so and so...
I am fine and tired and happy to reach the end of the working season...Leaving for Crete on August 2nd!
